TZS 1625: 2013 Cultured sour milk — Specification
Cultured sour milk also known in Kiswahili as “Mtindi” is a product produced from pasteurized milk usually reduced fat, cultured with mesophilic lactic starter cultures containing homofermentative cultures, Lactococcus lactis subsp.cremoris and Lactococcus lactic subsp.lactis with or without additional heterofermentative cultures Leuconostoc spp Leuconostoc mesenteroides subsp.cremoris Leuconostoc pseudomesenteroides, Lactococcus lactis subsp. lactis biovar diacetylactis.”
Development of this measure was necessitated by the need to ensure the safety and quality of cultured sour milk being produced and or marketed in Tanzania.
