- 5.3 Meat and offal
Meat and edible offal shall have been inspected and passed as fit for human consumption in accordance with the statutory provisions governing animal slaughtering, meat hygiene and meat inspection. The use of frozen meat and edible offal is allowed, provided that they have been frozen and stored under acceptable conditions and show no evidence of rancidity or discolouration and have been defrosted in a way that does not adversely affect quality. Only chilled carcasses in which rigor mortis has occurred fully or carcasses that have been frozen and thawed may be deboned for processing, unless hot deboning is used. - Reference of the measure
