- Pilau masala is a mixture of spices used in the preparation of spiced rice commonly known as pilau so as to improve organoleptic qualities of cooked rice. Usually composed of four or more well dried and milled spices. This mixture can be in equal ratios of spices or depending on consumers’ preferences.
