- 7.3.2 Meat
Meat used in the preparation of bacon shall be derived from the carcasses of gilts or barrows that are suitable for the manufacture of bacon. Meat from boars of an age not exceeding 6 months may be used.
7.3.5 Appearance
The product shall be of attractive appearance and colour, and shall, when determined in accordance with 10.6, have a meat-to-fat ratio of at least 3: 1 for bacon and 7: 1 for shoulder of pork, and shall be free from seed, bruises, rust, discolouration, unsightly pieces of skin and excessive cartilage. - Reference of the measure

- 5.1 General
Good hygiene and good manufacturing practices are to be incorporated during the harvesting, transport, handling, cleaning, preparation and processing of the product. Operations such as gutting, heading, skinning, boning or portioning shall be done in a clean and hygienic area and under such conditions as will ensure freedom from any contamination, deterioration, spoilage or the development of infections or toxigenic micro-organisms. Where gutting is performed, it shall be done in such a manner that split viscera do not adversely affect the quality, appearance and flavour of the product. Guts and fish offal shall be hygienically and effectively removed from cleaned fish products by mechanical means, water fluming or other acceptable means. Fish shall be thoroughly
washed in clean running water before and after cleaning and preparation.
5.3.2 Shucking
Shucking shall be performed under conditions of good hygiene and the product thoroughly washed under clean running water. Shucking shall be complete and the product shall be free from sand, dirt, silt, debris and other foreign material. - Reference of the measure

(1) Subject to the regulations for Class 1, Class 2, Class 3 and Lowest Class cabbage in subregulation 3 and 4 and the permissible deviations in subregulation 6, cabbage shall ;
(a) be intact;
(b) be free from decay;
(c) be clean and free from foreign matter, including soil;
(d) be free from Arthropoda infestation;
(e) be free from insect damage or damage caused by other organisms;
(f) be free from blemishes;
(g) be free from injuries;
(h) not be split;
(i) be free from bruises;
(j) be free from abnormal external moisture;
(k) be free from foreign odours;
(I) be free from cold damage;
(m) be free from sun-scorch;
(n) be free from any other factors that affect or may affect the quality of the cabbage detrimentally;
(o) be fresh and firm;
(p) show no sign of flower development;
(q) be sound and attractive in appearance and have normal characteristics of the cultivar; and
(r) be of such development and condition as to enable them to withstand transport and handling;
(2) The stem of the cabbage shall be cut off below the lowest point of leaf growth, the leaves should remain firmly attached, and the cut should be clean.
Classification
(3) (a) Class 1 cabbage ;
(i) shall have a compact head;
(ii) shall have firmly attached leaves: Provided that some outer leaves may be removed; and
(iii) shall in the case of green savoy cabbage and early cabbage, be properly trimmed: Provided that a number of outer leaves may be left for protection.
(b) Class 2 and Class 3 cabbage may ;
(i) be less compact; and
(ii) some outer leaves may be removed.
(c) In the case of lowest class cabbage - unspecified
Permissible deviations with regard to quality standards
(5) (a) Class 1 cabbage may deviate from the quality standards for Class 1 with 10% by number: Provided that the deviating cabbage ;

- 7.4.2 Meat
The meat used shall be obtained only from the skeletal musculature of sheep, and shall not include meat from the head, the masseter muscles excepted, or any offal other than skirt (diaphragm). Mechanically recovered meat shall not be used. The meat shall be well trimmed until free from perceptible sinews, tendons and other tough connective tissue. Thin flank and skirt shall, if used, be well trimmed and such that the connective tissue content of the end product does not detract from its appearance. The actual lean meat content, determined in accordance with 11.3, shall be at least 108 %.
7.4.3 Fat origin
The product shall not contain any intestinal or kidney fat, and only fat of ovine origin shall be permitted (see 12.1.2.5).
7.4.4 Fat content
The fat content, determined in accordance with 1 I .4, shall not exceed 25 % by mass.
7.4.5 Natural binder
If used, not more than 5 % by mass of natural binder shall be added to the product (see 5.23 and 12.1.2.5). Only natural binder of ovine origin is permitted.
7.4.6 Salt
In the preparation of the product, salt may be added to give a concentration of total chlorides, determined in accordance with 11.6 and expressed as sodium chloride, of not more than 3 % by mass.
7.4.7 Gelatine, agar-agar and carboxymethyl cellulose
The product may contain added gelatine, agar-agar or carboxymethyl cellulose and, in the case of the last two, not more than 1,0 % by mass and 0,5 % by mass, respectively, may be added to the product.
7.4.8 Phosphates
No phosphates shall have been added to the product.
7.4.9 Appearance, colour and texture
The product shall be of attractive appearance and shall have an acceptably uniform colour and a uniform firm coarse meat texture, both characteristic of this type of product. The original muscle structure shall be predominantly retained.
There shall, be no excessive exudation of gelatinous matter or moisture. When determined in accordance with 10.7, exuded fat, if any, shall not exceed 7 % of the d.n.m. The exuded fat shall be distributed in a reasonably even layer around the entire product surface and it shall not be hard at ambient temperature. Internal fat shall be evenly distributed in the product; no lumps of fat shall be present. The product shall be sliceable at a product temperature of between 10 °C and 15 °C. The product shall not stick to the sides of the container and it shall be free from large surface cavities and discolouration - Reference of the measure

Standards for classes
4. (1) A consignment of apricots shall be classified as Class 1 if it
(a) is of good quality;
(b) is characteristic of the cultivar and/or commercial type;
(c) is of a cultivar specified in Table 1;
(d) complies with the quality standards for Class 1 set out in Table 2;
(e) does not exceed the maximum permissible deviations by number for Class 1 as set out in Table 3; and
(f) complies with the ripeness standards for apricots as set out in Table 4.
(2) A consignment of apricots shall be classified as Class 2 if it
(a) is of a cultivar specified in Table 1;
(b) complies with the quality standards for Class 2 set out in Table 2;
(c) does not exceed the maximum permissible deviations by number for Class 2 as set out in Table 3; and
(d) complies with the ripeness standards for apricots as set out in Table 4.
(3) A consignment of apricots shall be classified as Lowest Class if it
(a) is of a cultivar specified in Table 1;
(b) complies with the quality standard for Lowest Class as set out in Table 2; and
(c) does not exceed the maximum permissible deviations by number for Lowest Class as set out in Table 3.
5. Containers in which apricots are packed shall --
(b) not impart a foreign taste or odour to the apricots;
(e) be strong and rigid enough to ensure that the original shape be retained and not bulge out,
dent in, break or tear, to the extent that apricots are damaged or are at risk of being

Quality standards

(2) Capsicums are divided into four types according to shape:
(a) elongated (pointed) capsicums;
(b) square blunt capsicums;
(c) square pointed capsicums; or
(d) flat capsicums.
Classification
(3) (a) In the case of Class 1 capsicums the stalk may be slightly damaged but the calyx shall be intact.
(b) In the case of Class 2 and Class 3 capsicums the calyx may be damaged or cut off.
(c) In the case of Lowest Class capsicums - unspecified.

(5) (a) Class 1 capsicums may deviate from the quality standards for Class 1 with 10% by mass: Provided that the capsicums-

5.4.1 General
Raw material used for canning shall be of a quality suitable for human consumption and shall be collected from clean waters not polluted by industrial or sewage discharges or other sources of pollution. Crustaceans shall not contain chemical, microbiological or biological contamination that may be hazardous to health. Transport of crustaceans to the factory shall be under conditions that will protect the product from the elements and from environmental contamination. Crustaceans shall be kept alive until immediately prior to processing or canning.
5.4.2 Preparation of crustaceans

- 7.5.2 Meat
The meat used shall be obtained only from the skeletal musculature of bovines, but not more than 5 % may be heart meat, or the masseter muscles of head meat, or skirt meat (diaphragm), or any
combination thereof. Mechanically recovered meat shall not be used. The meat shall have been trimmed until free from perceptible sinews, tendons and other tough connective tissue. The actual lean meat content determined in accordance with 11.3, shall be at least 108 %.
7.5.3 Fat origin
The product shall not contain intestinal fat, and only fat of bovine origin shall be permitted (see 12.1.2.5).
7.5.4 Fat content
Corned beef shall have been packed only as:
a) "Corned beef' without further qualification, in which case the fat content determined in accordance
with 11.4, shall not exceed 20 % by mass, or
b) "Lean corned beef' in which case the fat content determined in accordance with 11.4, shall not
exceed 15 % by mass, or
c) "Special lean corned beef', "Special lean-cut corned beef', or "Extra lean-cut corned beef', in which case the fat content determined in accordance with 11.4, shall not exceed 12 % by mass.
Words qualifying the title shall be in accordance with the regulations framed under the current
Foodstuffs, Cosmetics and Disinfectants Act.
7.5.5 Natural binder
If used, not more than 5 % by mass of natural binder (see 5.23 and 12.1.2.5) of bovine origin shall be added to the product. Its presence shall be declared in the ingredients panel of the label in plain type of not less than 1,5 mm face measurement.
7.5.6 Salt
In the preparation of the product, salt may be added to give a concentration of total chlorides,
determined in accordance with 1 1.6, and expressed as sodium chloride, of not more than 3 % by mass.
7.5.9 Appearance, colour and texture
The product shall be of attractive appearance and shall have an acceptably uniform colour and a
uniform firm coarse meat texture, both characteristic of this type of product. The original muscle
structure shall be predominantly retained. The product shall be free from a dispersion of denatured
proteinaceous matter.
There shall be no excessive exudation of gelatinous matter or moisture. When determined in
accordance with 10.7, exuded fat, if any, shall not exceed 10 % of the d.n.m. The exuded fat shall be
distributed in a reasonably even layer around the entire product surface and it shall not be hard at
ambient temperature. Internal fat shall be evenly distributed in the product; no lumps of fat shall be
present. The product shall be sliceable at a product temperature of between 10 "C and 15 "C. The
product shall not stick to the sides of the container and it shall be free from large surface cavities and

7.6.2.1 Actual lean meat content
The requirements given in 7.5.2 shall apply, but the actual lean meat content determined in accordance with 11.3, shall be at least 80 %.

The fat content determined in accordance with 4 1.4, shall not exceed 20 % by mass.

7.6.2.8 Appearance, colour and texture
The product shall be of attractive characteristic appearance and shall have an acceptably uniform colour and a characteristic fairly coarse texture, free from springiness. There shall be no significant amount of finely chopped or finely minced meat or emulsified material present. The product shall be sliceable at a product temperature of between 10 °C and 15 °C. Exuded fat, when determined in accordance with 10.7, shall not be more than 10 % of the d.n.m., and there shall be no excessive exudation of gelatinous matter, cereal or moisture. No lumps of fat or cereal shall be present. The product shall not stick to the sides of the container and shall be free from large surface cavities and discolouration.
7.8.10 Trimming and packing
The product shall be adequately trimmed and shall be free from bone. Whether the product is manufactured from one or more pieces, it shall be compact and permit slicing without breaking into pieces. Where the product is in the form of compressed pieces, and its appearance and sliceability suffer in consequence, this fact shall be conspicuously declared in the main panel of the label in compliance with the regulations under the current Foodstuffs, Cosmetics and Disinfectants Act.
Gammon may be packed with rind but only if the rind is intact and sliceable. Shoulder shall not be packed with rind. Gelatine or agar-agar may be used to solidify the juices provided that in the case of agar-agar, the content does not exceed 2 %. (aa) have a purple or green discolouration of 10 mm in the case of carrots 80 mm and shorter; or
(bb) have a purple or green discolouration of 20 mm in the case of carrots longer than 80 mm;
(ii) may have one or more cracks which separately or collectively do not exceed -
(aa) 10 mm in length and 2 mm in depth in the case of carrots 80 mm or shorter; and
(bb) 20 mm in length and 2 mm in depth in the case of carrots longer than 80 mm.
(iii) may have slight defects in shape; and
(iv) the roots must be of fresh appearance.
(b) Carrots classified as Class 2 and Class 3 ;
(i) shall be of a colour typical of the cultivar: Provided that the tops of the carrots may ;
(aa) have a purple or green discolouration of 20 mm in the case of carrots 100 mm or shorter; or
(bb) have a purple or green discolouration of 30 mm in the case of carrots longer than 100 mm; and
(ii) may have one or more cracks which separately or collectively do not exceed 30 mm in length and 3 mm in depth;
(iii) defects in shape.
(c) In the case of Lowest Class - unspecified.
Permissible deviations with regard to quality standards
(8) (a) Class 1 carrots may deviate from the quality standards for Class 1 by a maximum of 10% by mass or number in case of bunched carrots and an additional 10% by mass or number in case of bunched carrots may show a discolouration green or violet purple on the top: Provided that the carrots ;
(I) at least comply with the quality standards for Class 2; and
(ii) do not exceed the following individual limits:
decay: 2%
injuries: 6%
Arthropoda infestation: Degree as set out in regulation 4(4)(c);Part 1.
(b) Class 2 carrots may deviate from the quality standards for Class 2 by a maximum of 15% by mass and an additional 25% by mass broken carrots and carrots with broken tips are permissible: Provided that the carrots ;
( ) do not exceed the following individual limits, excluding carrots that are broken or have tips that are broken off:
decay: 4%
injuries: 8%
Arthropoda infestation: Limit as set out in regulatin 4(4)(c): Part1.
(c) Class 3 carrots may deviate from the quality standards for Class 3 by 25% by mass and an additional 25% by mass of broken carrots are permissible: Provided that the carrots ;
(i) are not affected by decay; and
(ii) do not exceed the following individual limits, excluding carrots that are
broken or have tips that are broken off:
decay: 6%
injuries:10%
Arthropoda infestation: Limit as set out in regulation 4(4)(c):Part 1.
(d) In the case of Lowest Class- decay shall not not exceed 20% by mass or number.
Permissible deviations with regard to colour variations

- 3. (1 ) No person shall sell potatoes in the Republic of South Africa -
(a) unless the potatoes are sold according to the classes referred to in regulation 4;
(b) unless the potatoes comply with the standards regarding quality referred to in regulation 5 as set out in Table 1 of Annexure A;
Classes for potatoes
4. There are four classes of potatoes, namely Class 1, Class 2, Class 3 and Lowest Class.
Standards for classes
5. (1) Subject to the provisions of subregulation (2) potatoes which are classified as Class 1, Class 2, Class 3 and Lowest Class shall comply with the specifications set out in Table 1 of Annexure A and depicted in the colour plates.
(2) The maximum extent to which Class 1, Class 2 and Class 3 potatoes may deviate from the specifications prescribed in subregulation (1) are determined in accordance to subregulation (3) and are set out in Table 3 of Annexure A.
(3) The extent to which Class 1, Class 2 and Class 3 potatoes deviates from the prescribed specifications shall be determined as follows:
(a) Examine the tubers in the sample of the consignment sensorially and on the basis of the colour plates in order to determine whether such deficiencies occur thereon or therein: Provided that any tuber from the sample referred to in regulation 9(2) with suspected internal deficiencies may be dissected for the purpose of a confirmation or
otherwise of the observation concerned.
(b) Determine with regard to each of the separate quality factors mentioned in subregulation (2) the mass of the potatoes that deviate from the prescribed specifications.
(c) Express the mass determined in paragraph (b) as a percentage of the net mass of the container of potatoes, such percentage represents the extent to which potatoes with the deviation concerned are present in such container: Provided that in the case of internal quality defects the degree of deviation shall be determined as a percentage of 3 kg. - Reference of the measure
