- Restriction on the sale of rice
2. (1) No person shall sell a consignment of rice in the Republic of South Africa --
(a) unless the rice concerned is sold according to the classes set out in regulations 4;
(b) unless the rice concerned complies with the standards for the classes set out in regulations 5;
3. Notwithstanding the provisions of regulations 4 and 5, all consignments of rice shall-
(a) be free from abnormal flavours and odours;
(b) be free from heavy metals limits set out in the Foodstuffs, Cosmetics and Disinfectants Act, 1972 (Act 54 of 1972);
(c) be safe and suitable for human consumption;
(d) be free from poisonous seeds: Provided that a consignment of rice in bulk quantities may contain poisonous seeds to the extent permitted in terms of the Foodstuffs,
Cosmetics and Disinfectants Act, 1972 (Act No. 54 of 1972);
(e) comply with the maximum residue levels prescribed for agricultural remedies in terms of Foodstuffs, Cosmetics and Disinfectants Act, 1972 (Act No. 54 of 1972);
(f) have moisture content not exceeding 14 percent;
(g) be free from insects and mites;
(h) be free from organisms of phytosanitary importance as determined by Agricultural Pest Act, 1983 (Act No. 36 of 1983); and
(i) not have a deviation specified in column 1 of Table 2 to a larger extent than the applicable maximum specified in column 2, 3, 4 or 5 of Table 2 opposite thereof for the class concerned.
Classes of rice
4. All rice shall be classified according to the length of grain as defined by regulation 5 -
(a) Long grain;
(b) Medium grain; or
(c) Short grain.
Standards for classes
5. (1) The standards for grain length shall be as follows:
(a) Long grain rice - rice with 70 % or more of whole milled rice grains having a kernel length of 6.6 mm or more.
(b) Medium grain rice - rice with 70% or more of whole milled rice having a kernel length of 5.5 mm but less than 6.6 mm;and
(c) Short grain rice - rice with 70% or more of whole milled rice having a kernel length of less than 5.5 mm.
(2) Milled rice may be further classified into the following degree of milling:
(a) Under milled rice;
(b) Well-milled rice; or

Styles and standards for styles
(1) (a) Canned pawpaws shall be presented as one of the following styles:
(i) Pawpaw slices
(ii) Pawpaw chunks
(iii) Pawpaw diced
(b) (i) Pawpaw slices shall consist of peeled and deseeded paw-paws cut into wedge shaped units.
(ii) Pawpaw chunks shall consist of peeled and deseeded paw-paws cut into irregular shaped and sized units.
(iii) Pawpaw diced shall consist of peeled and deseeded paw-paws cut into approximately cube-shaped units.
Quality Standards
(2) (a) There shall be four grades of canned pawpaws, namely Extra Choice Grade, Choice Grade, Substandard Grade and Manufacturers Grade.

- 1.1 This specification covers the following types of breathing apparatus for personal respiratory protection:

d) compressed-air line or powered fresh-air hose, incorporating hood for abrasive blasting;

f) compressed oxygen type;
g) closed-circuit type that comprises
1) a compressed oxygen type, or
2) chemical oxygen type;
h) escape type;

- 6.2.1 General
Only fish of one species shall be packed under the same batch code and sub code where applicable. Units of fish in any one container shall be reasonably uniform in size, appearance and form. Where it is necessary to adjust the fill of the container, a small cutlet or smaller unit of fish may be present. The manner of packing or the cut packed shall be in accordance with the product description on the label. In packs other than plain packs, the fish shall be pre-cooked and exuded liquids drained before the addition of the packing medium. Canned fish shall be practically free from units of mushy and brittle texture indicating poor quality raw material or fish softened by excessive
parasitical infestation.
6.2.2 Fillets
Where fish is packed as fillets, the fillets shall be reasonably uniform in size. An additional small piece may be included for mass adjustment.
6.2.3 Compliance with product description and sensory requirements
The presentation of the product and its appearance shall comply with the description of the product on the label. The appearance, colour, texture, odour and flavour shall be indicative and characteristic of fresh raw material used. The flesh colour shall be reasonably free from discolouration indicating excessive lipid oxidation or other chemical or biochemical reaction. Unless the product description indicates that fish units are de-skinned or that trawl marked raw materials were used, fish units shall be reasonably free from skin damage and excessive blemishes in the flesh. No canned fish product shall have a muddy appearance indicative of poor raw materials being used. Flesh texture shall not be excessively soft, mushy, tough or rubbery.
7.1.1.1.3 Products packed in sauce
The fish product shall be covered or partially covered with sauce upon opening of the can and the product shall comply with the description of the product. The presence of natural fish oils in the sauce is acceptable but there shall not be excessive separation of water from the sauce. Fish units shall be of uniform size and there shall not be excessive disintegration of flesh and bellies indicative of poor quality raw material or of bad manufacturing practice. In case of skin-on portions, fish skins shall be reasonably intact and not show signs of microbiological, biochemical or physical deterioration
7.1.1.2 Drained mass
7.1.1.2.1 The average drained mass of pilchards, sardines, mullet, herring, sardinella and similar types of fish packed in sauce in vertical cans shall be not less than 70 % of the declared mass. No individual drained mass shall be less than 65 % of the d.n.m. of products under 7.1.1.
7.1.1.2.2 When pilchards are presented in a brine or water packing medium in round vertically packed cans, the minimum drained mass shall be not less than 65 % of the d.n.m.
7.1.1.2.3 When packed as fillets of pilchards, sardinella, sardines or similar types of fish in flatcans and in a thick sauce, the drained mass shall be not less than 60 % of the d.n.m.
7.1.1.2.4 Mullet and herring fillets packed in flat cans and in a thick sauce shall have a drained mass of not less than 60 %.
7.1.1.2.5 The total drained mass of fish products packed as semi-preserves, where the packing medium composition preserves the product, shall be not less than 60 %.
7.1.1.3 Absence of scales and viscera
Unless fish is labelled scales on, not more than 10 % of the units examined as per 11.14 shall be covered with scales. When determined in accordance with 11.13 the product shall contain not more than 3 % of viscera and/or loose green feed. - Reference of the measure

- 7.10 Edible beef dripping
7.10.1 Preparation
Edible beef dripping shall be prepared by heat-rendering the fresh fat, exclusive of intestinal fat, of beef from animals in good health at the time of slaughter. Flesh and fibrous tissue shall be removed.
7.10.2 Rancidity
Freedom of the product from any odour or taste of rancidity shall be ensured by the method of processing.
7.10.3 Foreign fat
The rendered fat of any animal other than the bovine and any other foreign fat or oil shall not be present
in the product.
7.10.4 Fill of conhisaer
Subject to the requirements of the regulations under the current Trade Metrology Act, the container shall be filled as full as is practicable.
7.10.5 Salt [sodium chloride)
Sodium chloride shall not be added to the product.
7.10.6 Physical and chemical requirements of the product
7.10.6.1 Iodine value
The Wijs iodine value, determined in accordance with 11.9, shall be within the range 35 to 48.
7.1 0.6.2 Refractive index
When determined at a temperature of 60 °C, in accordance with 11.13, the refractive index shall be
within the range 1,4566 to 1,4587.
7.10.6.3 Melting point
The melting point, determined in accordance with 11.12, shall be within the range 40 °C to 46 °C.
7.10.6.4 Free fatty acids
The free fatty acid content, determined in accordance with 11. I0 and calculated as oleic acid, shall not exceed 0,75 % by mass.
7.10.6.5 Saponification value
The saponification value, determined in accordance with 11 .I 1, shall be within the range 193 mg to
205 mg KOH/g.
7.10.6.6 Moisture
The moisture content of the dripping, determined in accordance with 11.7, shall not exceed 0,25 % by

- 13. The regulations for chillies of the varieties (cultivars) of Capsicum frutescens L, are as follows: Quality standards
(1) Subject to the regulations for Class 1, Class 2, Class 3 and Lowest Class chillies in subregulation 2 and the permissible deviations in subregulation 3, chillies shall ;
(a) be intact;
(b) be free from decay;
(c) be free from foreign matter, including soil;
(d) be free from Arthropoda infestation;
(e) be free from insect damage or damage caused by other organisms;
(f) be free from blemishes: Provided that in the case of Class 2 one blemish not deeper than 1 mm per chilli is permissible;
(g) be free from cracks;
(h) be free from injuries;
(I) be free from bruises;
(j) be free from abnormal external moisture;
(k) be free from foreign odours;
(I) be free from cold damage;
(m) be free from sun-scorch;
(n) be free from any other factors that affect or may affect the quality of the chillies detrimentally;
(o) be fresh and firm;
(p) be sound and attractive in appearance and have normal characteristics of the cultivar; and
(q) be of such development and condition as to enable them to withstand transport and handling.
Classifications
(2) (a) In the case of Class 1 chillies ;
(i) the fruit shall be practically straight;
(ii) the fruit shall have a shiny green colour without any sign of a yellow discolouration: Provided that if the chillies are red it may not show any sign of withering;
(iii) the peduncle shall be green;
(iv) the calyx shall be green and undamaged;
(v) no malformation may be present.
(b) In the case of Class 2 and Class 3 chillies ;
(i) the fruit shall be fairly straight;
(ii) the fruit shall have a green colour with a slight sign of yellow discolouration:
Provided that if the chillies are red it may show no signs of withering;
(iii) the peduncle shall be cut off neatly; and
(iv) the calyx shall be undamaged.
Permissible deviations with regard to quality standards
(3) (a) Class 1 chillies may deviate from the quality standards for Class 1 with 10% by mass: Provided that the deviating chillies ;
(I) at least comply with the quality standards for Class 2; and
(ii) do not exceed the following individual limits:
decay: 2%
injuries: 6%
Arthropoda infestation: Limit as set out in regulation 4(4)(c): Part 1.

- 2. (1) No person shall sell a consignment of wheat in the Republic of South Africa --
(a) unless the wheat is sold according to the classes set out in regulation 3;
(b) unless the wheat complies with the standards for the classes set out in regulation 4;
(c) unless the wheat, where applicable, complies with the grades of wheat and the standards for grades set out in regulations 5 and 6 respectively;

3. The classes of wheat are --
(a) Soft Wheat; and
(b) Other Wheat.
Standards for classes
4. (1) Notwithstanding the provisions of sub regulations (2) and (3), a consignment of wheat shall --
(a) be free from any toxin, chemical or any other substance that renders it unsuitable for human consumption or for processing into or utilisation thereof as food or feed and may not exceed the permissible deviations regarding aflatoxin in terms of the Foodstuffs, Cosmetics and Disinfectants Act 54 of 1972;
(b) not contain more poisonous seeds or ergot sclerotia than permitted in terms of the Foodstuffs, Cosmetics and Disinfectants Act 54 of 1972;
(c) be free from organisms of phytosanitary importance as determined in terms of the Agricultural Pest Act 36 of 1983;
(d) be free from mould infected, sour and rancid other grain, foreign matter;
(e) be free from any undesired odour, taste or colour not typical of undamaged and sound wheat;
(f) be free from animal filth;
(g) be free from stones, glass, metal, coal or dung;
(h) with the exception of Class Other Wheat, be free from insects;
(i) with the exception of Class Other Wheat, be free from stinking smut infection; and
(j) with the exception of Class Other Wheat, have a moisture content not exceeding 13 percent.
(2) A consignment shall be classified as Soft Wheat if --
(a) the wheat in the consignment consists of at least 95 percent (m/m) of one or more of the soft wheat seeds; and
(b) it complies with the standards for Grade 1 and Grade 2 set out in regulation 6.
(3) A consignment of wheat shall be classified as Class Other Wheat if it does not comply with the standards for Soft Wheat.
Grades of wheat
5. (1) The grades for Soft Wheat shall be as follows:
(a) Grade 1; and
(b) Grade 2.
(2) No grades are determined for Class Other Wheat.
Standards for grades of wheat
6. (1) Subject to the provisions of sub regulation (2), a consignment of wheat shall be graded as --
(a) Grade 1 if the nature of deviation, specified in column 1 of Table 1 of the Annexure, in that consignment does not exceed the percentage specified in column 2 of the said table opposite the deviation concerned;
(b) Grade 2 if the nature of deviation, specified in column 1 of Table 1 of the Annexure, in that consignment does not exceed the percentage specified in column 3 of the said table opposite the deviation concerned.
(2) The minimum hectolitre masses for the different grades are as follows:
(a) Grade 1 - 76 kg; and

(ix) Pineapple broken rings shall consist of arc shaped portions which may not be uniform in size or shape.
(x) Pineapple wafers shall consist of uniformly circular slices or rings cut across the axis of the peeled and uncored pine-apple cylinders.
(xi) Pineapple crushed or grated shall consist of finely cut or shredded or grated or diced pieces of pineapples.
(xii) Pineapple spears shall consist of long slender pieces cut radially and lengthwise of the cored pineapples cylinder predominantly 65 mm or longer.

- 7.11 Meat rolls (meat loaves)
7.11.1 Preparation
Meat rolls (meat loaves) shall be prepared from chopped or comminuted meat of bovines or pork. Any
other meat used shall be declared on the main panel of the label. Permitted edible offal, seasoning and
flavouring substances, water, fat, starchy (farinaceous) materials (see 5.1 7), phosphates, milk powder,
eggs and other acceptable ingredients may be added.
7.1.2 Natural binder
Not more than 5 % by mass of natural binder may be added to the product. The nature of the natural binder shall be in accordance with the nature of the product: binder derived from pork shall not be used in a pure beef product nor shall binder derived from beef be used in a pure pork product (see 5.23 and 12.1.2.5).
7.1.3 Permitted edible offal (see 12.1.2.5)
The product shall contain only the following edible offal: heart, liver, kidney and tongue (see 7.12.4). The
use of blood shall be limited to the preparation of blood sausage or blood roll.
7.11 .4 Composition requirements
7.11.4.1 Meat roils (loaves) other than liver rolls
Meat rolls (loaves) other than liver rolls shall comply with the following requirements:
a) the actual total meat content of the product, determined in accordance with 11.3 and 11.4, shall be at least 75 %, except that corned beef roll (loaf) shall have a actual total meat content of at least 80 %;
b) the fat content of the roll (loaf), determined in accordance with 11.4, shall not exceed 35 % of the actual total meat content, except that in corned beef roll (loaf) the fat content of the roll shall not exceed 30 % of the actual total meat contents;
c) the starchy (farinaceous) material determined in accordance with 11.5 and calculated as crude starch
shall not exceed 6 % by mass;
d) corned beef roll (loaf) shall not contain heart, liver, kidney or tongue; and
e) in products other than corned beef roll (loaf), not more than 8 % by mass may consist of heart, liver,
kidney, tongue or any mixture of these (see 12.1.2.5 and 12.1.2.6), provided that the presence of
such edible offal is declared in the ingredients panel of the label in plain type of not less than 1,5 mm
face measurement.
7.11.4.2 Liver roll (loaf)
Liver rolls (loaves) shall comply with the following requirements:
a) the actual total meat content determined in accordance with 11.3 and 11.4, shall be at least 70 %;
b) the liver content shall be at least 25 % by mass;
c) the fat content (see 12.1.2.5 and 12.1.2.6) of the product determined in accordance with 11.4, shall
not exceed 40 % of the actual total meat content;
d) the starch content determined in accordance with 11.5 and calculated as crude starch shall not
exceed 6 % by mass; and
e) not more than 10 % by mass shall be heart, kidney, or tongue or any mixture of these (see 12.1.2.5
and 12.1.2.6), provided that the presence of such edible offal is declared in the ingredients panel of the label in plain type of not less than 1,5 mm face measurement.
7.1 1 .4.3 Meat rolls (loaves) with garnish
Where a product contains garnish, the specified meat content requirements shall be applicable to the meat constituent.
7.11.5 Curing salts
Corned beef roll (loaf) shall be adequately cured. Other products may contain curing salts (see 7.7).
7.1 1.6 Phosphates
Phosphates may be added to the product.
7.11.7 Agar-agar
The agar-agar content shall not exceed 0,2 % by mass.
7.4 1.8 Blood plasm
Except in the case of blood sausage or blood roll, blood plasma shall not be added to the product.
7.4 1.9 Appearance and texture
Discolouration that detracts from the appearance of the product shall not be present. The product shall not stick to the inside surfaces of the container. The exterior surface of the product, after the product has been removed from the container, shall be free from unevenness that detracts from its appearance.
Exuded material, when determined in accordance with 10.7, shall not exceed 3 % of the d.n.m. The product shall be readily sliceable at a product temperature of 20 °C or lower. Except in the case of liver rolls, the product shall not have a doughy, soggy or pasty texture. The product shall be free from grittiness, cavities, perceptible sinews, tendons or other tough connective tissue.
7.11.10 Flavour
The product shall have a characteristic meaty flavour and not a predominantly spicy or non-meaty flavour, and shall not be excessively salty. - Reference of the measure

- 3.2 Factory construction, layout and conditions
3.2.1 Location, size, hygienic design and conditions
3.2.1.I The location of the factory shall be such that the buildings can be kept acceptably free from objectionable odours, smoke, dust and other contamination, in order to comply with the relevant requirements for hygiene and sanitation of the Health Act, 1977(Act 63 of 1977).The factory buildings shall be of sound construction, in good repair,and large enough to prevent crowding of equipment and employees and to permit adequate cleaning and the maintenance of product quality and hygiene.
3.2.1.2 The factory premises shall be well drained and adequately fenced to keep out larger animals, such as cats and dogs, and also unauthorized persons and vehicles. Out door work areas and roads and pathways on the premises shall have a permanent surface of concrete, brick, bitumen or other durable material.Areas outside buildings and not in actual use shall either be covered by lawn or have a surface that is not liable to produce dust and that does not contain toxic substances.
3.2.1.3 The factory and equipment shall be so designed as to permit the processing of raw materials without undue delay. The buildings shall be so designed and constructed as to prevent the entry and harbouring of insects, birds, rodents and other vermin.
3.2.2 Roofs and ceilings
3.2.2.1 Roofs shall be weatherproof and made of non-absorbent material. Roofs and, where applicable, ceilings shall fit tightly to the walls and shall be at least 2,4 m above the floor. In the preparation, processing and packaging areas, the roof and, where applicable, the ceiling shall be at least 300 mm above any equipment and high enough to allow the free movement of mobile equipment
and moving parts of other equipment.
3.2.2.2 In the preparation, processing and packaging areas and in storage areas for ingredients and packaging materials for the product, the ceiling, or, where no ceiling is provided, the roof, shall be dustproof and faced with a suitable corrosion-resistant, light-coloured and water-impermeable material that is so constructed and finished as to minimize condensation, mould development, flaking and the lodgement of dirt, and that is capable of being cleaned without damage. The under side shall have a smooth surface.
Areas where sauce is prepared or where the cooked product is handled, or where ingredients and packaging materials are stored, shall have a ceiling.
3.2.3 Walls and doors
3.2.3.1 Outer walls shall be weatherproof and impermeable to water. Interior wall surfaces shall be faced with a smooth, light-coloured, washable material that is impermeable to water and free of unnecessary projections. In addition, the walls in the preparation, processing and packaging areas shall be faced with a suitable corrosion-resistant, light-coloured, washable and impact-resistant materialto a height of 2m above the floor, except that when soiling of the walls could occur above this height, the facing shall be continued to a higher level. All ledges on the inside of walls and all windowsills shall be sloped towards the floor at an angle of at least 45". The ledges shall be kept to a minimum size and windowsills shall beat least 1m above floor level. In the preparation, processing and packaging areas and in freezers, chill rooms and freezer storage rooms, the wall-to-wall and wall to-floor junctions shall be coved, the minimum radius of the coving being 25 mm and 40 mm respectively.
3.2.3.2 Doors and door frames shall be sheathed with, or made from, a suitable corrosion-resistant material and shall have seamless, light-coloured, water-impermeable and washable surfaces. If wood is used, it shall be sheathed to render it impermeable to water. Doors through which the product is moved between the preparation, the processing and the packaging areas shall be wide enough to prevent contamination of the product and damage to the doors. All doors that open direct from the outside atmosphere into the preparation, processing and packaging areas shall be provided with effective air screens or shall, as far as is practicable, be self-closing and tight-fitting. Freezer, chill room and freezer storage room doors shall be tight-fitting.
3.2.4 Floors
3.2.4.1 Floors shall be constructed of concrete or other material that is suitably impermeable to water, corrosion resistant and easy to clean, and that has an even surface that is smooth but not slippery, and that is free from cracks and open joints.
3.2.4.2 Floors of the preparation, processing and packaging areas and of freezers, chill rooms and freezer storage rooms shall be suitably sloped and shall be drained to external gullies, sumps and sewers. Outlets shall have, immediately outside the factory walls, a trap that prevents the entry of rodents.
3.2.4.3 Drainage channels shall be of the open type with removable covers, where necessary, and shall be designed to cope with the maximum expected flow of liquid without overflowing or causing flooding. There shall be no installations in a drainage channel that could obstruct the flow of water or the cleaning activities. Gully traps shall be fitted with easily removable strainers. Where necessary, duckboards of easily cleaned, water-impermeable material shall be provided. Wooden duckboards shall not be used in wet areas. Floors and drains shall be maintained in good condition and repair.
3.2.5 Lift cages and staircases
3.2.5.1 The inside surfaces of lift cages shall be suitably corrosion resistant, and lift shafts shall be properly drained and accessible for cleaning. Mesh doors may be used, provided that they are not such as to be conducive to unhygienic conditions.
3.2.5.2 Staircases in rooms where the product is prepared, processed, packaged or handled shall have the spaces between treads closed in with solid risers. Staircases shall have solid balustrades of such a height as to prevent contamination of products underneath the stairs.
3.2.6 Cables and pipes
3.2.6.1 Cables and pipes shall, where applicable, be
a) fixed above ceilings, or
b) chased into walls, or
c) fixed away from walls and ceilings and above the floor, and spaced in such a way that the ceilings,
walls, floor, cables and pipes can be easily cleaned and maintained in a hygienic condition, or
d) carried under the floor
3.2.6.2 Drainage and sewer pipes shall not be installed above ceilings in preparation, processing or packaging areas, nor shall they be installed in such a way that accidental leakages could contaminate the product. The drainage and sewer pipes shall have an inside diameter of at least 100 mm and shall be properly vented to the outside atmosphere.
3.2.7 Illumination
An illumination of at least 220 Ix in general work areas and at least 540 Ix at points where close examination of the product is carried out, shall be provided and shall be such that it does not significantly alter the appearance of the colour of the product. Luminaires suspended over the work areas where the product is handled at any stage during preparation, processing or packaging shall be of the safety type or otherwise so protected as to prevent contamination of the product in the event of breakage of a luminaire or lamp.
3.2.8 Ventilation
The ventilation shall be such that it keeps the air fresh, removes excess water vapour, and that it prevents the build-up of excessive heat, the formation of condensate and the growth of mould on overhead structures. The air shall be free from noxious fumes, vapours, dust and contaminating aerosols. The airflow shall be from the more hygienic to the less hygienic areas. Natural ventilation shall be augmented, where necessary, by mechanical means. Windows that open for ventilation purposes shall be insect-screened. The screens shall be easily removable for cleaning, and shall be made from suitable corrosion-resistant material.
3.2.9 Hand-washing facilities
3.2.9.1 The following shall be provided at the entrances to the preparation and processing areas of the factory that are used by the employees, and at other conveniently situated places in the preparation and processing areas of the factory within easy reach of the employees, and at the toilet
exits:
a) an acceptable number of wash-hand basins, with an abundant supply of hot and cold, or warm running water in the temperature range 40 ͦ C to 50 ͦ C,and that complies with the requirements of 3.4.1;
b) an ample supply of unscented liquid soap or acceptable detergent in active condition;
c) disposable paper towels or hot-air driers; and
d) taps operated by means other than the hands or elbows, for example knee-operated or foot operated taps, or push-button taps with preset volume control.
4.5.4 Lobsters shall be graded for size and lobsters in any one container shall be acceptably uniform in size. Where lobsters are not graded for size, this fact shall be conspicuously declared on all main panels of immediate containers and master containers.
4.7.5 Except in the case of tails intended for packing for catering purposes, tails shall be graded by mass or by length, as appropriate.The count of tails in any container, as determined in accordance with 8.4, shall be in accordance with the declaration on the container. The tails in any one container shall be acceptably uniform in size and, as far as is practicable within any category, the mass of each tail shall fall within the mass range obtained by dividing the sum of the declared net mass of the appropriate package unit and the minimum overpack (see 4.9) by the corresponding maximum and minimum counts for that category.
4.7.6 Lobster tails in catering packs may be presented graded or ungraded for size, but this shall be declaredon the main panel of the label. Provided that the flesh is firm and sound, some minor defects to the shell of such tails may be present. In every other respect, tails in catering packs shall comply with the quality, wrapping, packing and labelling requirements of this specification.
4.8 Shredded or comminuted lobster
Only the flesh from the carapaces of lobsters that were active at the time of tailbreaking shall be used. Unless the lobsters are properly washed immediately and stored in hygienic containers at a temperature not exceeding 4 ̊C,or in frozen condition while awaiting further processing or transportation in vehicles of hygienic construction to nearby processing plants, the recovery of the flesh from the carapaces shall follow immediately upon the breaking of the tails. The product shall have a characteristic colour, shall show no discoloration of any nature and shall be free from pieces of shell and other foreign matter. Lobsters belonging to different species shall not be used together in the manufacture of the product.
5.5 Condition of frozen product
5.5.1 General
On thawing, when examined in accordance with 8.1, the frozen product shall be clean, shall have an attractive, characteristic appearance, shall in every way be sound, intact, and free from defects, and the flesh shall have a springy texture. There shall be no off-odours and other indications of deterioration of the product, or of the use of inferior quality raw materials. The product shall be free from foreign matter, foreign odours, discoloration and freezer burn (deep dehydration). There shall be no evidence of an inadequate freezing process or of deterioration. The flavour of the cooked product, whether the product was packed raw or cooked,shall be normal and typical of the species.The texture of the cooked product, whether the product was packed raw or cooked, shall be succulent, firm and springy and otherwise characteristic of the species.
5.5.2 Frozen lobster tails
The shell of lobster tails shall be intact. The telsons (tail fins) shall not be broken or damaged. The colour ofthe flesh shall be uniform (either pinkish or translucent) and there shall be no loss or change in colour and no discoloration.Gut (anal canal) shall not be present.
5.5.3 Frozen whole lobster (raw, cooked or packed in ice)
Broken legs shall be virtually absent but, when present,shall be packed with the product. Exuded body fluids and spilled feed shall not be perceptible. The shell of lobsters shall be intact.The telson (tailfin) shall not be broken or damaged. The units shall not be distorted or twisted. Frozen whole lobster shall have been adequately purged (see 4.5.1). The units shall be free from discoloration. - Reference of the measure
