(a) jam shall be the product obtained by boiling clean, sound fruit to a pulpy or semi-solid consistency and shall contain not less than 45 parts by mass of the named fruit to 100 parts by mass of the finished product ; B6

(b) marmalade shall be the product obtained by boiling one or more, types of clean, sound citrus fruit or parts of citrus fruit;B6
(c) fruit-jelly shall be the product obtained by boiling the strained juice of, or the strained water extract from, clean, sound fruit to a suitable consistency and shall be reasonably clear or transparent and be free of seeds and pulp, containing not less than 45 parts by mass of the named fruit juice to 100 parts by mass of the finished product;
with refined or mill white sugar, as defined in section 5 of the Food and Food Standards (Sugar and Allied Products) RGN 838/1974, and may, in the case of jam and marmalade, contain added water. - Reference of the measure

(e) shall be of the standard of purity or quality laid down in the current edition of the British Pharmacopoeia or British Pharmaceutical Codex:

(i) citric, tartaric or lactic acid or citrates, tartrates or lactates of the quality specified in the British Pharmacopoeia;
(ii) permitted colouring ingredients or permitted preservatives;
(iii) dextrose, glucose syrup, invert sugar, honey, spices or synthetic flavouring substances;
(iv) in the case of fruit deficient in pectin, pectin or pectinous material derived from plant sources:
Provided that added pectin, calculated as calcium pectate, shall not exceed—
(i) 0,3% in jam and marmalade; and

(ii) subject to the provisions of subsections (2) and (3), food shall contain no more than 0,2% of mineral oil, if, of necessity,
it has come into contact with some surface lubricated or greased with mineral oil.
(2) Any liquid mineral oil used as a lubricant with which food may come into contact shall comply with the specifications for liquid paraffin laid down in the current edition of the British Pharmacopoeia.

(1) Distilled alcoholic beverages, alcoholic cordials or liqueurs shall contain not less than thirty-seven , nought per centum by volume of absolute alcohol unless the label prominently states the actual percentage by volume of absolute alcohol contained therein.
(2) Alcoholic cordials , liqueur and aperitifs –
(a) Shall be products obtained by the mixing or distillation of grain , spirit, brandy or other distilled spirits with fruit flavours, leaves or other botanical substances or their juices, or with extracts or essences derived by infusion, percolation or maceration of such other botanical substances.
(b) May have added to them during the course of manufacture, sucrose of dextrose or both as required for the type of alcoholic cordial, liqueur or aperitif;
(c) Shall contain not less than seventeen per centum of absolute alcoholic by volume
(d) May contain natural of artificial flavouring preparations and colours as permitted by the food and standards (preservatives, additives, and prohibited substances) regulations, 1972. - Reference of the measure

- 10. Whisky
(1) whisky shall be potable alcoholic distillate obtained from a mash of cereal grain or cereal grain products saccharified by the diastase of malt or other enzyme and fermented by the action of yeast and aged in small wood
(2) blended whisky, shall be so described on the label, may be produced from a blend of whisky and neutral sprit.
(3) whisky and blended whisky may contain a flavouring or caramel
(4) no person shall make any claim with respect to the age of whisky other than the period during which the whisky has been stored and aged in small wood for at least three years:
Provided that any period not exceeding six months during which such whisky was held in other containers may be claimed as age.
(5) blended whisky may be described as containing whisky of a particular age ; provided that such age is assessed in the manner referred to in subsection (4)
(6) scotch whisky shall be whisky distilled in Scotland as Scotch whisky for domestic consumption in accordance with the laws of the United Kingdom
(7) Irish whiskey shall be whiskey distilled in the United Kingdom or in the Republic of Ireland as Irish whiskey for domestic consumption in accordance with the laws of the United Kingdom or the Republic of Ireland
(8) Canadian whiskey , Canadian rye whiskey or rye whisky shall be whisky distilled in Canada as Canadian whisky for domestic consumption in accordance with the laws of Canada
(9) Any other specific whisky of whiskey whose specificity is based on its being distilled in a specific region or area of a country shall comply with the laws of that country as well as the requirements of these regulations. - Reference of the measure

(1) Rum shall be a potable alcoholic distillate obtained from sugar cane products fermented by the action of yeast or a mixture and other organisms , or a mixture of such distillates and may contain caramel and be flavoured with fruit or other botanical substances or flavourings.
